First check your eggs for freshness.
Fresh eggs make the best hard boiled eggs. To check for freshness you will need a bowl of salt water. Gently place the eggs (one at a time) in tho saltwater. If the egg sinks it is fresh. If the egg floats you should get rid of the egg. Place the good eggs into an empty pot. Do so gently to not crack the eggs.
Keep the eggs to only 2 layers. Once all the eggs are in the pot cover them with cold water, about 1 inch above the top of the eggs. Cold water and cold eggs (fresh from the refrigerator) work best. Add a pinch of salt to the water and place over heat. Bring water to a furious boil then remove pot from heat. Allow to sit for 12-14 minutes.
To check if eggs are fully hard bolied try sitting one on the counter and spinning it. If it spins freely and fast then it is done, if the spinning is slow or sluggish the eggs need to be cooked a few minutes longer.
Once eggs are done place them into cold/ice water to stop the cooking process. Do not leave in the cold water for too long, but if you aren't going to peal them right away place the eggs in the refrigerator.
